Choosing Ingredients

Whatever you are cooking , and using whatever method to do it ,relies on choosing the right ingredients for your meal. Before you buy your ingredients. Consider the three A's Are the ingredients Affordable, Available and accessible?  If this isn't the case for any of these,  perhaps consider if any of the ingredients that are a neither nor all of the above can be replaced and or omitted ,e.g. if you can substitute or adapt a beef dish if a specific cut isn't available, affordable or accessible. You'll find that this is achievable without compromising much at all. I've prepared dishes on the fly a number of times with success. 

 

Quality and Freshness

The relationship between quality and freshness goes hand in hand, that's not to say some ingredients cant still be of use after they've past their best 

 

 

 

 

Choosing the freshest and best quality ingredients is a corner stone of a good meal. The fresher the ingredients are when they are bought , the better the finished product will be ,& if stored correctly will stay fresher for longer too. below are a few things to look out for when looking for freshness. But mostly trust your senses,  does it look good, feel good to the touch, are there any unpleasant smells. then all the signs of food spoilage are there , so if that's the case, don't buy it and choose something else. 

Unless you are shopping from the counter, its hard to check for freshness and quality for a lot of products we buy in the supermarket as they're generally packaged up , so we really only have the look of it to go by, if you are lucky enough to have access to a market and or  a good green grocer , butcher or fish monger then you can have more control over the quality and freshness of the food you choose to buy..

The Following sections will provide you how to check for quality and freshness when buying your ingredients. Remember a key element in reducing preventable food waste is buying your ingredients at their best where possible. There is something galling about buying something you thought was fresh only for it to spoil as soon as you get it home. If you know what to look for and are able to, it pays to check your food at the point of purchase.
